"Slop"

Jaime has told me more than once that it is amazing how I go into my pantry and come out and within a few minutes I have a meal on the table. When all our kids were young they would ask "What's for dinner? and I'd say "Slop." Which really meant I didn't know but I'd throw something together! Well... being a working woman there are many nights I still make "slop" and last night was one of those nights. This is what I put together so give it a try.

1 can black beans(rinsed and drained)
6 chicken tenderloins
2 tablespoons white chicken chili seasoning or use a little garlic powder and cumin
1 large tomato (sliced)
1/4 cup MILD jalapeno slices
1 cup shredded colby jack

I layered the ingredients in a 9X9 pyrex dish. Cooked it for 40 minutes at 350 degrees.
Serve with tortilla chips and salad.

It was super easy , yummy and it is what I had around the house thus...SLOP.

  1. Sounds yummy! I'm making shrimp po-boys and seafood balls with homemade remoulade sauce tonight. I'll even wear my apron!

  2. That is so funny, constantly through the years my husband wanted to know what was for dinner..My pat answer was whatever's in the pantry. His statement was always the same...I don't see anything...but, within 45 minutes of being home there was an interesting new meal. Some were flops, and never prepared again. But, nobody lost weight in this house.
